The use of 2,5-dimethylpyrazine 2,5-dimethylpyrazine (C6H8N2) is a widely used pyrazine compound, mainly used in the following fields:
1. Food additives Aromaenhancing function: because of its strong aroma of fried peanuts, chocolate, cream, etc., it is widely used to prepare essence for baked food, meat, coffee, nuts, cocoa, potatoes and other foods. The flavor can be significantly improved with very low addition (1– 2 μ g/kg). Natural sources: Naturally present in foods such as coffee, peanuts, cocoa, and grilled beef, 2,5-dimethylpyrazine produced through biological fermentation is more in line with the demand for natural food additives.
2.
